Abstract
Purpose
The purpose of this study is to develop functional chicken patties with incorporation of mango peel powder as a fat replacer.
Design/methodology/approach
Low-fat chicken patties were developed by incorporating mango peel powder as fat replacer at 1.0, 2.0 and 3.0% level to replace 50% vegetable oil in the formulation. The product was evaluated for various physico-chemical properties and sensory attributes.
Findings
There was a significant difference (p < 0.05) between control and treatments for all physico-chemical properties except product pH and protein content. The emulsion pH, emulsion stability, water activity, fat and cholesterol content of mango peel treated chicken patties were significantly (p < 0.01) lower, however, cooking yield, moisture content, fat retention and moisture retention values were significantly (p < 0.01) higher than control. All mineral content decreased significantly (p < 0.05) in treatments except potassium and phosphorous content. Incorporation of mango peel powder had a significant (p < 0.05) effect on textural and colour parameters. Sensory scores decreased significantly (p < 0.05) in treatments, however, the product was well acceptable up to 2% of mango peel powder incorporation.
Originality/value
Fat has an important role in comminuted meat products, its reduction results in rubbery and dry textured products and poses difficulties in terms of flavour and texture. Meat products with high-fat content may exert a great harmful effect on human health such as obesity and high blood cholesterol level. Hence, there is a need for using suitable ingredient, which is able to replace fat without affecting quality. Mango peel may be used as suitable fat replacer at 2% to replace 50% added vegetable fat without affecting quality parameters.

Abstract
Purpose
The present study was conducted to evaluate the effect of banana peel flour as fat replacer on rheological, physico-chemical, textural, mineral content and sensory properties of chicken patties.
Design/methodology/approach
Ultra low fat chicken patties were prepared with incorporation of banana peel flour at 0% (C), 1% (BP1), 2% (BP2) and 3% (BP3) levels separately to replace 50% externally added vegetable fat in formulation and evaluated for various quality characteristics and sensory attributes.
Findings
Highest G' and G''? modulus were observed in banana peel powder incorporated emulsion. No cross-point was observed at all ranges of frequency in meat emulsions prepared with banana peel. Among physico-chemical properties, control had significantly (p < 0.05) higher emulsion pH, emulsion stability, product pH, water activity values, fat and cholesterol content; however, cooking yield, moisture and ash content, fat retention and moisture retention values increased significantly (p < 0.05) in treatment patties. Mineral, textural and colour parameters had a significant (p < 0.05) effect except on manganese content and a* values. Various sensory scores decreased significantly (p < 0.05) with increased level of banana peel flour.
Practical implications
Sensory scores of 3% banana peel powder incorporated patties were significantly (p < 0.05) lower than other treatments. There was no significant difference between 1 and 2% banana peel incorporated chicken patties. Therefore, an ultra low fat chicken patties incorporated with 2.0% banana peel flour to replace 50% vegetable fat were selected as the best treatment.
Originality/value
Present global trend and life style are currently driving ready-to-eat healthy meat products and factors include extended working hours, increasing number of single-person households and perception of food as reward. Fat is an important component of meat products and imparts tenderness, improving flavor and mouth feel to processed meat products, like chicken patties. However intake of excess energy in form of saturated and unsaturated fat may lead to various life style diseases in consumers. Hence development of ultra low fat chicken patties with incorporation of fruit waste without adverse effect on sensory properties may be a significant challenge.

Abstract
The Best Management Practices for Sustainable Urban Drainage System including On-Site Detention have been introduced in the Storm Water Management Manual for Malaysia. Flash floods are becoming frequent in the urbanised areas in this country. Inefficient drainage system has been highlighted as one of the factors. Urban drains were reported incapable of coping with the unexpected heavy rainfall. Concrete drains are favourable in construction industry for economic reasons. An experimental research was conducted out to investigate the effectiveness of infiltration integration with drainage system to reduce flash flood. This laboratory research was conducted in the Universiti Teknologi Malaysia. Experiments were performed for selected drainage bed slopes and focussed on several spacing between precast drain sections along the system. The total and infiltrated flow rates, water surface and velocity profiles were examined. The results showed that drain flow rates were reduced by 60.9%–89.6% when the spacing between drain sections were enlarged. Meanwhile, the flow depths in drain sections were dropped by 48.2%–68.9%, and the water velocity was lowered up to 49% as the spacing between drain sections were increased. The study found that the drainage bed slope also influenced the performance of the infiltrated concrete drainage system.

Premal Seth, Head, Human Resources, of Technosol, sat in his Bengaluru office at 9 pm dreading the traffic he would have to negotiate if he stepped outside to catch a bite and equally dreading going up for coffee to the coffee shop 100 meters from his office. It was the first week of April (the week after the finalization of performance appraisals and ratings of all employees) and he would often bump into known and unknown people within the company who were disappointed, upset, sad, or plain angry at how the manager had ranked him/her or how unfair the performance management system was. Deciding not to get up at all, he focused on the various pending grievance emails. As he was going through them, an email from Vasundhara Rao, a senior subject matter expert, located in Ahmedabad, caught his attention (for details about the case characters, refer Exhibit 1).

Abstract
Purpose
To facilitate teacher–researcher collaboration in order to implement an informational writing research project using the framework of Browse, Collect, Collate, and Compose embedded within the writing workshop.
Design/methodology/approach
This study was conducted using a qualitative (Merriam, 1998) method of inquiry, more specifically, case study research design. A researcher and a practitioner came together to explore problems related to authentic use of expository genre and collaborated to help fourth graders write informational books.
Findings
The development of an authentic informational book was in contrast to the inauthentic purposes whereby students studied expository writing as preparation for statewide testing of student writing achievement. The study advocates the usage of authentic literacy contexts where students can enjoy writing for personal purposes.
Practical implications
Collaboration between classroom teachers of writing and researchers contributes to the theoretical and practical knowledge base of the teacher and researcher. Overall literacy development is enhanced when students read and write out of their own interest. Students use trade books as mentor texts to compose and create their informational books. The value of seeing fourth graders as researchers and making an informational book serves the authentic purpose of writing.

Abstract
Purpose
This study aims to investigate the effect of authentic leadership on internal whistleblowing intention through psychological safety.
Design/methodology/approach
To test the hypotheses, the partial least square analysis is applied to questionnaire survey data from 201 employees from State Province Government of Indonesia.
Findings
The results reveal that authentic leadership and psychological safety influence the internal whistleblowing intention. The result also indicates that authentic leadership has an indirect effect on internal whistleblowing intention through psychological safety.
Originality/value
This study has made a valuable contribution for scholars and managers to the understanding of factors that affect internal whistleblowing intention at government officers in Indonesia context.
